Ingredients
- 4 crisp apples
- 1 3/4 cups old-fashioned rolled oats
- 5 tbsp softened butter (vegan if desired)
- 1/3-1/4 cup coconut sugar
- 1 tbsp maple syrup
- 1 tbsp cinnamon
- pinch of sea salt
- 2 cup apple cider (depends on size of baking dish)
- vanilla ice cream for serving
Directions
- Preheat the oven to 400°F.
- Slice the tops off the apples and hollow them out using a melon baller (save the apple).
- In a medium size bowl, add the oats, butter, coconut sugar, maple syrup, cinnamon, and sea salt. Stir it all together.
- Stuff the apples with the oat mixture and place the apples into a baking dish.
- Pour the apple cider into the bottom of the baking dish.
- Bake the stuffed apple in the oven for 35-40 minutes. They should be soft.
- Serve warm, topped with vanilla ice cream.
