
Chocolate Chip Tahini Cookies

Ingredients
- 1 egg (or flax egg)
- 1/3 cup tahini
- 1/4-1/3 cup coconut sugar (adjust for preferred sweetness)
- 2 tbsp coconut oil, melted (may use butter)
- 1/2 tsp vanilla
- 1 cup almond flour
- 1/4 tsp sea salt
- 1/2 tsp baking soda
- 1/2 cup chocolate chips
Directions
- Preheat the oven to 350°F, line a baking sheet or stone with unbleached parchment paper.
- In a medium bowl add the egg, tahini, coconut sugar, coconut oil, and vanilla. Mix well using a whisk.
- Add the almond flour, sea salt and baking soda. Using a spatula, mix to combine.
- Now fold in the chocolate chips.
- Form 12 equal size balls out of the cookie dough. Set the balls onto the lined baking pan and flatten to your desired thickness, using the back of a fork (or your fingers).
- Transfer to the oven and bake for 11-12 minutes or until golden along the edges.
Recipe notes:
For a vegan swap, replace the egg with a flax egg. -- 1 flax egg = 1 tbsp ground flax and 3 tbsp room temp water
