Sweet Potato Veggie Burgers

Ingredients

  • 2 medium sweet potatoes, peeled and cut into cubes
  • 1 cup quinoa
  • 1/4 cup almond flour
  • 1/2 cup fresh cilantro, washed and chopped
  • 2 tbsp flax seed, ground
  • 1/4 cup red onion, diced
  • 3 cloves garlic
  • 1 1/2 tsp cumin powder
  • 1 1/2 tsp smoked paprika
  • 1 tsp chili powder
  • 3/4-1 tsp sea salt or to taste
  • black pepper
  • 2 tbsp olive oil

Directions

  1. Preheat the oven to 375° F. Line a baking sheet with parchment paper and add the cubed sweet potatoes in a single layer. Bake for 30 minutes or until soft. Once finished, puree them with a mixer (or by hand).
  2. Cook the quinoa according to package.
  3. In a medium size bowl, add the pureed sweet potato, quinoa, almond flour, cilantro, flax seed, onion, garlic, cumin powder, paprika, chili powder, sea salt black pepper, and olive oil (just 1 tbsp, save 1 tbsp for brushing the burgers). Mix it well with your hands. Form 8 equal size burgers.
  4. Heat a large heavy skillet over medium-high heat. Brush a little bit of olive oil onto each burger (both sides). Cook each burger for 6-8 minutes on each side. They will be golden brown in color.
  5. Serve on bun of choice, loaded with fresh veggie toppings!
  6. Enjoy!!
