Ingredients

  • 1 cup unsweetened almond milk (or coconut milk)
  • 3 tablespoons chia seeds
  • 1/2 teaspoon vanilla extract
  • 1/2 cup fresh or frozen blueberries
  • 1/2 ripe banana (for natural sweetness)
  • 1/4 teaspoon ground cinnamon
  • Optional: drizzle of raw honey or maple syrup

Directions

  1. In a blender, combine almond milk, blueberries, banana, vanilla, and cinnamon. Blend until smooth.
  2. Pour into a jar or bowl and stir in the chia seeds.
  3. Let sit for 5 minutes, then stir again to prevent clumping.
  4. Cover and refrigerate for at least 4 hours or overnight.
  5. Top with more blueberries, a sprinkle of hemp seeds, or a dollop of almond butter before serving.
