Healthy Honey Glazed Carrots (Perfect ) for Thanksgiving

Ingredients

  • 2 lbs carrots, peeled and cut on a diagonal into 1–1½-inch piece
  • 2 tablespoons raw honey (instead of ¼ cup)
  • 2 teaspoons extra-virgin olive oil
  • 1 tablespoon unsalted butter
  • 2 garlic cloves, minced (instead of 3)
  • ½ teaspoon ground ginger
  • ½ teaspoon cinnamon
  • ¼ teaspoon sea salt
  • ⅛ teaspoon black pepper
  • Zest of ½ a lemon + a splash of fresh lemon juice (adds brightness, reduces sweetness)
  • 2 tablespoons chopped fresh parsley and/or thyme for garnish
  • Optional: ¼ cup toasted chopped pecans or walnuts for crunch (healthy fats)
  • Optional: ½ cup finely chopped kale or spinach stirred in at the end for extra veggie boost

Directions

  1. Preheat the oven to 425 °F.
  2. Toss the carrot pieces in the olive oil + butter mixture, add garlic, honey, ginger, cinnamon, salt & pepper and mix until evenly coated.
  3. Spread the carrots in a single layer on a baking sheet. Roast for 20-25 minutes, tossing once halfway through, until tender and lightly caramelized.
  4. If using greens (kale/spinach), stir them into the roasted carrots for the final 1-2 minutes of cooking until just wilted.
  5. Remove from oven; immediately sprinkle lemon zest + splash lemon juice, add the chopped herbs, and toss.
  6. If using nuts, sprinkle them on top just before serving.
