
Healthy Honey Glazed Carrots (Perfect ) for Thanksgiving

Ingredients
- 2 lbs carrots, peeled and cut on a diagonal into 1–1½-inch piece

2 tablespoons raw honey (instead of ¼ cup)

2 teaspoons extra-virgin olive oil

1 tablespoon unsalted butter

2 garlic cloves, minced (instead of 3)
-
½ teaspoon ground ginger
-
½ teaspoon cinnamon
-
¼ teaspoon sea salt
-
⅛ teaspoon black pepper

Zest of ½ a lemon + a splash of fresh lemon juice (adds brightness, reduces sweetness)

2 tablespoons chopped fresh parsley and/or thyme for garnish

Optional: ¼ cup toasted chopped pecans or walnuts for crunch (healthy fats)

Optional: ½ cup finely chopped kale or spinach stirred in at the end for extra veggie boost
Directions
- Preheat the oven to 425 °F.
- Toss the carrot pieces in the olive oil + butter mixture, add garlic, honey, ginger, cinnamon, salt & pepper and mix until evenly coated.
- Spread the carrots in a single layer on a baking sheet. Roast for 20-25 minutes, tossing once halfway through, until tender and lightly caramelized.

If using greens (kale/spinach), stir them into the roasted carrots for the final 1-2 minutes of cooking until just wilted.

Remove from oven; immediately sprinkle lemon zest + splash lemon juice, add the chopped herbs, and toss.

If using nuts, sprinkle them on top just before serving.
