
Mediterranean Chickpea Bowl

Ingredients
- 1 cup cooked quinoa (or brown rice)
- 1 cup cooked chickpeas or a 15 oz can, rinsed and drained
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- ½ small red onion, thinly sliced
- 1 avocado, diced
- 2 tbsp feta cheese (optional)
- 2 tbsp fresh parsley or mint, chopped
- 1/4 cup kalamata olives, sliced
- 2 tbsp extra-virgin olive oil
- Juice of 1 lemon
- 1 garlic clove, minced
- 1 tsp Dijon mustard
- Salt and pepper to taste
Directions
- In a medium bowl, whisk together olive oil, lemon juice, garlic, Dijon, salt, and pepper to make the dressing.
- In a large bowl, combine quinoa, chickpeas, cucumber, tomatoes, onion, avocado, and herbs.
- Pour dressing over and toss gently to combine.
- Top with feta if desired.
- Optional additions: Add a dollop of hummus or tzatziki on the side, or drizzle a little extra olive oil and a squeeze of lemon. if desired.
