Ingredients

  • 1 cup cooked quinoa (or brown rice)
  • 1 cup cooked chickpeas or a 15 oz can, rinsed and drained
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ½ small red onion, thinly sliced
  • 1 avocado, diced
  • 2 tbsp feta cheese (optional)
  • 2 tbsp fresh parsley or mint, chopped
  • 1/4 cup kalamata olives, sliced
  • 2 tbsp extra-virgin olive oil
  • Juice of 1 lemon
  • 1 garlic clove, minced
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Directions

  1. In a medium bowl, whisk together olive oil, lemon juice, garlic, Dijon, salt, and pepper to make the dressing.
  2. In a large bowl, combine quinoa, chickpeas, cucumber, tomatoes, onion, avocado, and herbs.
  3. Pour dressing over and toss gently to combine.
  4. Top with feta if desired.
  5. Optional additions: Add a dollop of hummus or tzatziki on the side, or drizzle a little extra olive oil and a squeeze of lemon. if desired.
