Prep: 10 mins
Cook Time: 14 mins
Servings: 6
Ingredients
- 1/2 cup chocolate chips (vegan, if need)
- 1/2 tsp coconut oil
- 1/3 cup coconut sugar
- 1/4 tsp baking soda
- 1/4 tsp nutmeg
- 1/4 tsp sea salt
- 1 cup spelt flour (feel free to swap)
- 1 tsp apple cider vinegar
- 1 tsp baking powder
- 1 tsp vanilla extract
- 2/3 cup nondairy milk of choice (flax or coconut)
- 2 tbsp coconut oil, melted
Directions
- Preheat oven to 350°F. Prepare your 6 hole donut pan by lightly oiling them with coconut oil.
- In a large bowl, whisk all the dry ingredients together.
- In another bowl, mix all the wet ingredients together (except the 1/2 tsp coconut oil).
- Add the wet ingredients to the dry ingredients and mix to combine. Do not over mix or the donuts will come out more dense.
- Using a freezer bag or a pastry bag, pipe the donut batter evenly among the donut pan.
- Bake for 12-14 minutes, a toothpick should come out clean.
- Allow the donuts to cool for 5 mins, then tap the bottom of the pan to remove them. Allow them to fully cool on a baking sheet before decorating them.
- For the glaze: Melt the chocolate chips and the 1/2 tsp of coconut oil, mix well until all the chips are completely melted.
- Dip the donuts 1/2 way into the glaze and set them back onto the rack. Top with desired toppings and enjoy!
