
Arugula and Purple Cabbage Salad With Lime-Dijon Dressing

Ingredients
- *Salad
- 4 cups arugula
- 2 cups purple cabbage chopped, thin slices
- 1/3 cup silvered almonds
- 1/2 cup fresh blueberries
- *Dressing
- 1/4 cup olive oil
- 3 tbsp red wine vinegar
- 2 tbsp dijon mustard
- 1/4 tsp sea salt
- 1/4 tsp black pepper
- 1/2 lime (or lemon), juiced
- 1-2 cloves garlic, crushed (optional)
Directions
- Prepare all the salad ingredients as listed, add to a large bowl.
- To prepare the dressing: in a small bowl, add all of the ingredients and stir well.
- Add the dressing to the salad bowl. Mix well, serve and enjoy!
