
Avocado and Beet Arugula Salad

Ingredients
- 2 tbsp balsamic vinegar
- 1 1/2 tbsp extra virgin olive oil
- Sea Salt and black pepper to taste
- 1 1/2 cup arugula
- 1/4 cup red onion, chopped
- 1/4 cup cucumber, chopped
- 1/2 avocado, slice
- Kalamata olives
- pickled beets (3-4 slices per serving)
- Pine nuts (a small handful per serving)
Directions
- In a small bowl, add the balsamic vinegar, olive oil, salt and pepper - mix and set aside.
- In a medium size bowl, add the arugula, red onion, and cucumber - combine.
- Add the dressing to they salad and serve into individual bowls (or one big bowl, my style).
- Top with avocado, olives, pine nuts, beets.
