Ingredients

  • 2 tbsp balsamic vinegar
  • 1 1/2 tbsp extra virgin olive oil
  • Sea Salt and black pepper to taste
  • 1 1/2 cup arugula
  • 1/4 cup red onion, chopped
  • 1/4 cup cucumber, chopped
  • 1/2 avocado, slice
  • Kalamata olives
  • pickled beets (3-4 slices per serving)
  • Pine nuts (a small handful per serving)

Directions

  1. In a small bowl, add the balsamic vinegar, olive oil, salt and pepper - mix and set aside.
  2. In a medium size bowl, add the arugula, red onion, and cucumber - combine.
  3. Add the dressing to they salad and serve into individual bowls (or one big bowl, my style).
  4. Top with avocado, olives, pine nuts, beets.
  5. Bon appetite!
