Another lunch... another salad!

Arugula is one of my favourite salad greens. I love its distinct fresh and peppery taste. It is also a total nutritional rock star with its impressive amount of Vitamin C, Vitamin A, Vitamin K, and folate.

This fresh salad has many nutritious ingredients that I absolutely love. AVOCADO, give me all them healthy fats... PINE NUTS, oh that creamy, crunchy goodness... BEETS, need I say more?! I love beets so it's a bonus that they are loaded with 'good for you' vitamins and minerals. Many articles mention how beets can help improve ones athletic performance due to its dietary nitrates (aids in energy production and oxygen consumption).

So why not make a super delicious recipe that not only tastes ahhhhmazing but fuels your body!

For this salad I purchased a jar of (small batch) beets from the local market but you can also make your own.

Ingredients

  • 2 tbsp balsamic vinegar
  • 1 1/2 tbsp extra virgin olive oil
  • Sea Salt and black pepper to taste
  • 1 1/2 cup arugula
  • 1/4 cup red onion, chopped
  • 1/4 cup cucumber, chopped
  • 1/2 avocado, slice
  • Kalamata olives
  • pickled beets (3-4 slices per serving)
  • Pine nuts (a small handful per serving)

Directions

In a small bowl, add the balsamic vinegar, olive oil, salt and pepper - mix and set aside.

In a medium size bowl, add the arugula, red onion, and cucumber - combine.

Add the dressing to they salad and serve into individual bowls (or one big bowl, my style).

Top with avocado, olives, pine nuts, beets.
