Avocado Paratha

Ingredients

  • 1 1/2 avocado
  • 1 1/4 cups (+ 3 tbsp) spelt flour
  • 1/4 cup cilantro chopped
  • 1/4 cup red onion, diced
  • 1 clove garlic, minced
  • 2 tsp lemon juice
  • 3/4 tsp garam masala
  • 3/4 tsp ground cumin powder
  • 3/4 tsp turmeric powder
  • flour (extra for dusting when rolling the paratha)
  • sea salt and pepper to taste

Directions

  1. Peel the avocado, remove the meat and mash it using a fork.
  2. Add the cumin, garam masala, turmeric, salt and pepper, cilantro, onions, and lemon juice - mix well.
  3. Add the spelt flour to the avocado mix and knead it with your hand into a soft dough (add warm water by the tbsp, if required).
  4. Let the ball of dough sit for 10-20 minutes.
  5. Heat a skillet on the stove top on medium heat (I use a cast iron one that my MIL brought from India).
  6. Make equal size balls from the dough (I make 7-9)
  7. Take a ball, dust it with flour and flatten it out using your hands. Then roll it out using a rolling pin.
  8. Place the rolled out paratha onto the heated skillet and let it cook, you will see some bubbles (45-60 seconds).
  9. Flip the paratha and cook this side the same.
  10. Flip the paratha again and pat it down with a towel or a spatula for a few seconds.
  11. Remove from the heat and add some butter. Serve hot with yogurt, fresh vegetables, and/or chutney.
  12. Enjoy!
