
Banana Bread (GF and Vegan Option)

Ingredients
- 1 1/2 cup spelt flour
- 1/2 cup walnuts or chocolate chips (optional)
- 1/4 cup coconut sugar
- 3 tbsp hemp seeds
- 1/4 tsp salt (I prefer pink Himalayan sea salt)
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 tsp vanilla
- 1/3 cup butter or vegan butter, room temp
- 2 eggs (flax eggs for vegan, see notes)
- 1/4 cup milk of choice
- 3 spotty bananas, mashed
Directions
- Preheat the oven to 350˚ F
- Line a 8 x 4" pan with coconut oil or unbleached parchment paper. Set aside.
- In a large bowl, mix the dry ingredients.
- In another bowl, mix the wet. Now add the wet to the dry bowl, combine well but do not over mix.
- Bake the loaf for 50-60 minutes. Check with a toothpick to make sure it is baked through.
Recipe notes:
1 flax egg = 1 tbsp ground flax + 3 tbsp water, mix well.
