As a child, I remember waking up in the morning to the smell of my mama’s fresh loaf of banana bread. The smell would spread throughout our home and everyone would know what was baking in the oven. Her bread was perfect! My goal as a mother is to create this experience for my little ones and hubby. This sweet loaf of goodness is like a hug in a pan... My children and husband love it. Mission accomplished.
This recipe relies on the bananas and some coconut sugar to give a sweet and natural flavor.
Feel free to swap the eggs for flax eggs and the butter for vegan butter to make this deliciously nutritious recipe into a vegan friendly version.

Preheat the oven to 350˚ F
Line a 8 x 4" pan with coconut oil or unbleached parchment paper. Set aside.
In a large bowl, mix the dry ingredients.
In another bowl, mix the wet. Now add the wet to the dry bowl, combine well but do not over mix.
Bake the loaf for 50-60 minutes. Check with a toothpick to make sure it is baked through.
