Warm the tortillas on a skillet over medium heat for about 30 seconds per side until soft and slightly toasted. Set aside wrapped in a clean towel.
In a pan, heat olive oil and scramble the eggs with turmeric, cumin, salt, and pepper until fluffy. (If using tofu, crumble and sauté with the same spices for 5–7 minutes.)
Warm the black beans in a small pan or microwave until heated through.
Assemble each taco by layering scrambled eggs (or tofu), black beans, avocado slices, slaw, and pickled onions.
Top with fresh cilantro and a spoonful of salsa or green sauce for extra flavor and antioxidants. Squeeze with juice of fresh lime!
