Ingredients

    Dry Ingredients

  • 1 cup (120g) white whole wheat flour
  • ¾ cup (75g) quick oats
  • ½ cup (60g) oat flour
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp ground ginger
  • ¼ tsp nutmeg
  • ½ tsp sea salt
  • 3 tbsp ground flaxseed
  • Wet Ingredients

  • 3 large eggs
  • ¾ cup unsweetened applesauce
  • ¼ cup avocado oil
  • ¼ cup maple syrup or honey
  • ½ cup plain Greek yogurt
  • 1 tsp vanilla extract
  • 1 tsp orange zest
  • ¼ cup fresh orange juice
  • Add Ins

  • 2 cups grated carrots
  • 1 cup grated Honeycrisp apple
  • ⅓ cup raisins
  • ½ cup chopped pecans or walnuts
  • ¼ cup unsweetened shredded coconut

Directions

Preheat oven to 350°F and line a 12-cup muffin tin.

Whisk together all dry ingredients in a large bowl.

In a separate bowl, whisk wet ingredients until smooth.

Add wet ingredients to dry ingredients and stir until just combined.

Fold in carrots, apple, raisins, nuts, and coconut.

Divide batter evenly among muffin cups, filling almost to the top.

Bake for 18–22 minutes, or until a toothpick comes out clean.

Cool in the pan for 5 minutes before transferring to a wire rack.
