These Walnut & Lentil Burgers have become a favorite in our house for busy weeknights and summer cookouts. Hearty lentils and crunchy walnuts create a satisfying texture, while simple seasonings bring plenty of flavor. They're packed with plant protein, fiber, and heart-healthy fats that can help support long-term health and steady energy. Serve them on a whole grain bun, over a salad, or tucked into lettuce wraps for a nourishing meal the whole family will enjoy. I sometimes double the batch and store them in the freezer for last minute meals.

Add lentils to a large bowl and lightly mash with a fork, leaving some texture.
Stir in walnuts, oats, onion, garlic, egg, tomato paste, soy sauce, and seasonings.
Mix until combined. Let the mixture rest for 5 minutes so the oats can absorb moisture.
Form into 6 patties.
Heat olive oil in a skillet over medium heat.
Cook patties for 4–5 minutes per side until golden brown and heated through.
Serve on whole grain buns or over a salad.
