
Glow Veggie Breakfast Tacos

Ingredients
- 6 small corn tortillas (or whole grain tortillas)
- 4 large eggs (or tofu scramble for vegan)
- 1/2 cup cooked black beans, warmed
- 1 ripe avocado, sliced
- 1/3 cup shredded cabbage or radish slaw
- 1/4 cup pickled red onions (optional but recommended)
- 1 tbsp olive oil
- 1/2 tsp turmeric
- 1/2 tsp cumin
- Sea salt + pepper to taste
- Fresh cilantro
- Salsa or green sauce for topping
- 1 lime
Directions
- Warm the tortillas on a skillet over medium heat for about 30 seconds per side until soft and slightly toasted. Set aside wrapped in a clean towel.
- In a pan, heat olive oil and scramble the eggs with turmeric, cumin, salt, and pepper until fluffy. (If using tofu, crumble and sauté with the same spices for 5–7 minutes.)
- Warm the black beans in a small pan or microwave until heated through.
- Assemble each taco by layering scrambled eggs (or tofu), black beans, avocado slices, slaw, and pickled onions.
- Top with fresh cilantro and a spoonful of salsa or green sauce for extra flavor and antioxidants. Squeeze with juice of fresh lime!
