
Chickpea & Spinach Protein Patties

Ingredients
- 1 ½ cup cooked chickpeas
- 1 cup packed spinach
- ½ small red onion, chopped
- 2 cloves garlic
- ½ cup cooked quinoa or oat flour
- 2 tbsp nutritional yeast (hello B12 & cheesy vibes)
- 2 tbsp tahini or hummus
- 1 tsp cumin
- Salt & pepper to taste
- 1 tbsp olive oil for cooking
- ½ tsp chili flakes
Directions
- Blend the base: Add chickpeas, spinach, onion, garlic, tahini, and spices to a food processor. Pulse until combined but still slightly chunky.
- Mix it up: Stir in the quinoa (or oat flour) and nutritional yeast. The mix should be thick enough to form patties—if too wet, add more quinoa or oats.
- Shape & sizzle: Form 8 mini patties. Heat olive oil in a pan over medium heat and cook patties for about 4–5 minutes per side until golden and crispy.
- Serve it hot: Stack on a whole grain bun, toss on a salad, or wrap it in a collard green with avocado and hot sauce.
