Say hello to your new weeknight go-to: these Chickpea & Spinach Protein Patties are everything-flavorful, nourishing, and effortlessly chic. Think golden crisp edges, garlicky goodness, and a subtle smoky kick all wrapped up in a plant-powered patty. Perfect for salad stacking, burger building, or sneaky snacking straight from the pan (we won’t judge, we'll join you).

They’re packed with protein, loaded with greens, and ready to be your meal prep BFF. Bonus: they freeze like a dream and reheat like they just came off the skillet.

Whip them up in 20 minutes and serve with a dollop of tahini, tzatziki, or even a hot honey drizzle if you're feeling bold.

Because healthy should never mean boring—and dinner should always feel a little special.

Enjoy,

XO,

Bobbielee

Ingredients

  • 1 ½ cup cooked chickpeas
  • 1 cup packed spinach
  • ½ small red onion, chopped
  • 2 cloves garlic
  • ½ cup cooked quinoa or oat flour
  • 2 tbsp nutritional yeast (hello B12 & cheesy vibes)
  • 2 tbsp tahini or hummus
  • 1 tsp cumin
  • Salt & pepper to taste
  • 1 tbsp olive oil for cooking
  • ½ tsp chili flakes

Directions

Blend the base: Add chickpeas, spinach, onion, garlic, tahini, and spices to a food processor. Pulse until combined but still slightly chunky.

Mix it up: Stir in the quinoa (or oat flour) and nutritional yeast. The mix should be thick enough to form patties—if too wet, add more quinoa or oats.

Shape & sizzle: Form 8 mini patties. Heat olive oil in a pan over medium heat and cook patties for about 4–5 minutes per side until golden and crispy.

Serve it hot: Stack on a whole grain bun, toss on a salad, or wrap it in a collard green with avocado and hot sauce.
