Blend the base: Add chickpeas, spinach, onion, garlic, tahini, and spices to a food processor. Pulse until combined but still slightly chunky.
Mix it up: Stir in the quinoa (or oat flour) and nutritional yeast. The mix should be thick enough to form patties—if too wet, add more quinoa or oats.
Shape & sizzle: Form 8 mini patties. Heat olive oil in a pan over medium heat and cook patties for about 4–5 minutes per side until golden and crispy.
