Ingredients

  • 1 ½ cup cooked chickpeas
  • 1 cup packed spinach
  • ½ small red onion, chopped
  • 2 cloves garlic
  • ½ cup cooked quinoa or oat flour
  • 2 tbsp nutritional yeast (hello B12 & cheesy vibes)
  • 2 tbsp tahini or hummus
  • 1 tsp cumin
  • Salt & pepper to taste
  • 1 tbsp olive oil for cooking
  • ½ tsp chili flakes

Directions

Blend the base: Add chickpeas, spinach, onion, garlic, tahini, and spices to a food processor. Pulse until combined but still slightly chunky.

Mix it up: Stir in the quinoa (or oat flour) and nutritional yeast. The mix should be thick enough to form patties—if too wet, add more quinoa or oats.

Shape & sizzle: Form 8 mini patties. Heat olive oil in a pan over medium heat and cook patties for about 4–5 minutes per side until golden and crispy.

Serve it hot: Stack on a whole grain bun, toss on a salad, or wrap it in a collard green with avocado and hot sauce.
