Ingredients

  • 6 hard-boiled eggs, chopped
  • 1 large ripe avocado, diced
  • 2 tbsp plain Greek yogurt
  • 1 tsp Dijon mustard
  • 1 tbsp fresh lemon juice
  • 2 tbsp red onion, finely diced
  • 2 tbsp fresh chives or green onions, sliced
  • 1/4 tsp garlic powder
  • Sea salt and black pepper, to taste

Directions

  1. Place chopped eggs and avocado in a bowl.
  2. Add Greek yogurt, Dijon mustard, lemon juice, onion, chives, and garlic powder.
  3. Gently mix until combined, leaving some chunks of avocado.
  4. Season with salt and pepper to taste.
  5. Serve immediately.
