
Feta And Walnut, Arugula Salad With Blackberry Dressing

Ingredients
- *Salad
- 1/3 cup blackberries
- 1/3 cup strawberries
- 1/4 cup chopped walnuts
- 1/4 cup feta
- 1 cup cooked quinoa
- 2 tbsp balsamic vinegar
- 4 cups arugula
- sea salt and pepper to taste
- squeeze of lemon
- hemp seeds (optional)
- *Dressing
- 1 1/2 tbsp balsamic vinegar
- 1/4 cup blackberries
- 2 tbsp olive oil
Directions
- In a large bowl, add the arugula, sliced strawberries, blackberries, crumbled feta, walnuts, hemp seeds and quinoa (if using).
- For the dressing, add the dressing ingredients (1/4 cup blackberries, 2-3 tbsp olive oil, 1 1/2 tbsp balsamic vinegar and squeeze of lemon) to a blender. Blend until smooth.
- Serve the greens into serving bowls and drizzle with the dressing.
