Ingredients

  • *Salad
  • 1/3 cup blackberries
  • 1/3 cup strawberries
  • 1/4 cup chopped walnuts
  • 1/4 cup feta
  • 1 cup cooked quinoa
  • 2 tbsp balsamic vinegar
  • 4 cups arugula
  • sea salt and pepper to taste
  • squeeze of lemon
  • hemp seeds (optional)
  • *Dressing
  • 1 1/2 tbsp balsamic vinegar
  • 1/4 cup blackberries
  • 2 tbsp olive oil

Directions

  1. In a large bowl, add the arugula, sliced strawberries, blackberries, crumbled feta, walnuts, hemp seeds and quinoa (if using).
  2. For the dressing, add the dressing ingredients (1/4 cup blackberries, 2-3 tbsp olive oil, 1 1/2 tbsp balsamic vinegar and squeeze of lemon) to a blender. Blend until smooth.
  3. Serve the greens into serving bowls and drizzle with the dressing.
