This salad is perfect, it is a simple and light salad that brings so much color to the table. It makes "eating the rainbow" easy and delicious!

To increase that heartiness of the salad, add some cooked quinoa, hemp seeds, or any other protein of choice!

Whether you are entertaining guests or eating alone, this salad definitely sparks dinner table joy!

Ingredients

    Salad

  • 1/3 cup blackberries
  • 1/3 cup strawberries
  • 1/4 cup chopped walnuts
  • 1/4 cup feta
  • 1 cup cooked quinoa
  • 2 tbsp balsamic vinegar
  • 4 cups arugula
  • sea salt and pepper to taste
  • squeeze of lemon
  • hemp seeds (optional)
  • Dressing

  • 1 1/2 tbsp balsamic vinegar
  • 1/4 cup blackberries
  • 2 tbsp olive oil

Directions

In a large bowl, add the arugula, sliced strawberries, blackberries, crumbled feta, walnuts, hemp seeds and quinoa (if using).

For the dressing, add the dressing ingredients (1/4 cup blackberries, 2-3 tbsp olive oil, 1 1/2 tbsp balsamic vinegar and squeeze of lemon) to a blender. Blend until smooth.

Serve the greens into serving bowls and drizzle with the dressing.
