French (Spelt Flour) Crepes

Servings: 7-8 crepes

Ingredients

  • 1 cup milk (I used oat milk)
  • 1 cup white spelt flour
  • 1 tsp butter, melted
  • 1 tsp maple syrup
  • 1 tsp vanilla extract
  • 2 eggs
  • pinch of sea salt

Directions

  1. Add all ingredients to a blender, blend until smooth OR in a medium bowl, whisk all ingredients until smooth. Set aside for 25 minutes.
  2. Preheat a frying pan or crepe pan over medium heat. (De Buyer crepe pan is what I use)
  3. Add some butter or coconut oil and allow it to melt.
  4. Add about 1/4 cup of batter at a time to the pan. Give it a swirl or use your crepe tool to distribute the batter evenly.
  5. Cook each side for 1 1/2 minutes. I often have to discard the first crepe.
  6. Continue this method until all crepes are complete.
  7. Fill as desired and serve immediately!
