
French (Spelt Flour) Crepes

Servings: 7-8 crepes
Ingredients
- 1 cup milk (I used oat milk)
- 1 cup white spelt flour
- 1 tsp butter, melted
- 1 tsp maple syrup
- 1 tsp vanilla extract
- 2 eggs
- pinch of sea salt
Directions
- Add all ingredients to a blender, blend until smooth OR in a medium bowl, whisk all ingredients until smooth. Set aside for 25 minutes.
- Preheat a frying pan or crepe pan over medium heat. (De Buyer crepe pan is what I use)
- Add some butter or coconut oil and allow it to melt.
- Add about 1/4 cup of batter at a time to the pan. Give it a swirl or use your crepe tool to distribute the batter evenly.
- Cook each side for 1 1/2 minutes. I often have to discard the first crepe.
- Continue this method until all crepes are complete.
- Fill as desired and serve immediately!
