Bonjour... Hello! Welcome to my crepe recipe... (with the Frenchiest French accent ever)
Crepes!! I loooooooove crepes, my son calls them “100% delicious” and I would have to agree with him.
For this recipe I used white spelt flour but feel free to swap for your flour of choice.
I fill these crepes with fresh fruit and sprinkle with cacao powder, however, you can top as you like. Get creative, set the littles up with bowls of fruit and let them fill their own.

Add all ingredients to a blender, blend until smooth OR in a medium bowl, whisk all ingredients until smooth. Set aside for 25 minutes.
Preheat a frying pan or crepe pan over medium heat. (De Buyer crepe pan is what I use)
Add some butter or coconut oil and allow it to melt.
Add about 1/4 cup of batter at a time to the pan. Give it a swirl or use your crepe tool to distribute the batter evenly.
Cook each side for 1 1/2 minutes. I often have to discard the first crepe.
Continue this method until all crepes are complete.
Fill as desired and serve immediately!
