Ingredients
- *Salad
- 2 romaine hearts, chopped into bite size pieces
- 1 red bell pepper, chopped
- 20 cherry tomatoes, quartered
- 1/2 cup cucumber, chopped
- 1/2 cup pitted Kalamata olives, roughly cut
- 1/3 cup red onion, thinly sliced
- 1/3 cup walnuts (optional to roast them)
- feta cheese
- lemon wedges
- Optional: serve with pita bread
- *Dressing
- ¼ cup extra-virgin olive oil
- 4 tablespoons red wine vinegar
- 1 lemon, juiced
- 2 garlic clove, minced
- ½ teaspoon dried oregano
- ¼ teaspoon Dijon mustard
- ¼ teaspoon salt
- Fresh ground black pepper
Directions
- For the salad: arrange on a plate or bowl (as shown in photo) or add all the prepared ingredients to a large bowl and toss together.

For the dressing: add all the ingredients to a small bowl and whist together.
- Now add the dressing to the salad
