This healthy and delicious Greek salad makes a great meal or side option. Packed with fiber rich veggies and topped with a homemade dressing this salad is a nutritious addition to any menu.

For a vegan friendly version, swap the feta cheese for another ingredient, e.g. cubed tofu.

For some extra plant based protein, try adding chickpeas, hemp seeds, and/or cooked quinoa.

Ingredients

    Salad

  • 2 romaine hearts, chopped into bite size pieces
  • 1 red bell pepper, chopped
  • 20 cherry tomatoes, quartered
  • 1/2 cup cucumber, chopped
  • 1/2 cup pitted Kalamata olives, roughly cut
  • 1/3 cup red onion, thinly sliced
  • 1/3 cup walnuts (optional to roast them)
  • feta cheese
  • lemon wedges
  • Optional: serve with pita bread
  • Dressing

  • ¼ cup extra-virgin olive oil
  • 4 tablespoons red wine vinegar
  • 1 lemon, juiced
  • 2 garlic clove, minced
  • ½ teaspoon dried oregano
  • ¼ teaspoon Dijon mustard
  • ¼ teaspoon salt
  • Fresh ground black pepper

Directions

For the salad: arrange on a plate or bowl (as shown in photo) or add all the prepared ingredients to a large bowl and toss together.

For the dressing: add all the ingredients to a small bowl and whist together.

Now add the dressing to the salad
