Fire up your grill and bring out the corn. This Mexican style corn is about to become one of your favorite ways to make this summer time staple!

We often make this delicious side and serve it with our tacos and burritos.

If we have leftovers, we remove the corn from the cob and add it to wraps, salads, or quinoa bowls...

Ingredients

  • 4 ears of corn, shucked
  • butter (vegan)
  • ⅓ cup vegan-friendly mayonnaise
  • 2 cloves garlic, minced
  • 3/4 tsp chili powder and/or paprika powder
  • 1 tbsp finely chopped cilantro
  • 1-2 tbsp fresh lime juice
  • ½ cup of crumbled vegan feta (or Cotija cheese if not vegan)
  • ¼ tsp of sea salt
  • pepper
  • lime wedges and cilantro for garnish

Directions

Preheat the bbq and cook the corn on the grill. Cook the corn until it is cooked through with light charring.

While the corn is cooking, in a medium size bowl mix the mayo, garlic, cilantro, and sea salt.

Once the corn is finished cooking, add a dab of butter on each piece. Then using a pastry brush, spread the mayo mixture over the cooked corn. Garnish with fresh lime juice, cheese and cilantro, sprinkle (a little love) chili powder or paprika, and pepper. Serve hot.. ENJOY!!
