Ingredients
- *Corn Kabobs
- 2 cobs of corn, 1 1/2 in thick pieces
- 1 medium zucchini, cut into 1 inch pieces
- 1/2 medium red onion, cut into chunks
- peaches, cut into 8 even pieces
- Top with fresh squeezed lemon or lime juice, feta cheese or vegan cheese, sea salt, pepper, and cilantro
Directions
- Thread the vegetables onto the skewers.
- Heat the grill on medium heat.
- Grill the kabobs uncovered for 11-13 minutes. They should be cooked until brown and tender.
