Ingredients

  • *Corn Kabobs
  • 2 cobs of corn, 1 1/2 in thick pieces
  • 1 medium zucchini, cut into 1 inch pieces
  • 1/2 medium red onion, cut into chunks
  • peaches, cut into 8 even pieces
  • Top with fresh squeezed lemon or lime juice, feta cheese or vegan cheese, sea salt, pepper, and cilantro

Directions

  1. Thread the vegetables onto the skewers.
  2. Heat the grill on medium heat.
  3. Grill the kabobs uncovered for 11-13 minutes. They should be cooked until brown and tender.
