There’s something about the delicious smell of food cooking on the grill on a warm summer's day... It brings on all the feels! Without a doubt, summer and barbecuing go hand in hand. What else can you bring to the grill? Summer fresh produce!

What's great about these kabobs is that they can be made using produce you have available in your kitchen (or garden). You may need to adjust the cook time a bit and cook until soft.

These kabobs make a perfect side dish, sandwich filler, or a great topper on a rice or quinoa bowl.

Go ahead and fire up your grill, this really is such a great way to enjoy those in season vegetables!

Ingredients

    Corn Kabobs

  • 2 cobs of corn, 1 1/2 in thick pieces
  • 1 medium zucchini, cut into 1 inch pieces
  • 1/2 medium red onion, cut into chunks
  • peaches, cut into 8 even pieces
  • Top with fresh squeezed lemon or lime juice, feta cheese or vegan cheese, sea salt, pepper, and cilantro

Directions

Thread the vegetables onto the skewers.

Heat the grill on medium heat.

Grill the kabobs uncovered for 11-13 minutes. They should be cooked until brown and tender.
