Ingredients

    For the Sweet Potatoes:

  • 2 large sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • For the Guacamole:*

  • 2 ripe avocados
  • 1 small red onion, finely diced
  • 1 medium tomato, finely diced
  • 1 jalapeño, seeded and finely diced
  • 2 tablespoons fresh lime juice
  • 1/4 cup fresh cilantro, chopped
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper

Directions

Preheat Oven: Preheat your oven to 400°F (200°C).

Prepare Sweet Potatoes: Wash and dry the sweet potatoes thoroughly. Cut them lengthwise into halves.

Season Sweet Potatoes: Place the sweet potatoes on a baking sheet lined with parchment paper. Drizzle olive oil over the sweet potatoes, and then sprinkle with sea salt, black pepper, and smoked paprika. Rub the seasonings in to ensure they are evenly coated.

Bake Sweet Potatoes: Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the sweet potatoes are tender and lightly browned on the edges.

Prepare Guacamole: While the sweet potatoes are baking, prepare the guacamole. In a medium bowl, mash the avocados until smooth. Add the diced red onion, tomato, jalapeño, lime juice, cilantro, sea salt, and black pepper. Mix well to combine.

Assemble: Once the sweet potatoes are done, remove them from the oven and let them cool slightly. Top each sweet potato half with a generous scoop of guacamole.

Serve: Serve immediately and enjoy this wholesome and delicious dish!
