Mediterranean Chickpea Salad

Ingredients
- 1 1/4 cup cooked chickpeas or may use 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, finely chopped
- 1/2 cup Kalamata olives, pitted and sliced
- 1/4 cup crumbled feta cheese (optional)
- 1/4 cup chopped fresh parsley
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Directions
- In a large bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, olives, feta cheese (if using), and parsley.
Drizzle with olive oil and lemon juice.
Toss gently to combine.
Season with salt and pepper to taste.
Serve immediately or chill in the refrigerator for about 30 minutes for the flavors to meld.
