Oat Waffles (GF and Vegan option)

Ingredients

  • 1 1/2 cups rolled oats, blended to a flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 2 medium eggs (if vegan use flax eggs - noted in description)
  • 2 tbsp pure maple syrup
  • 3/4 cup milk of choice, room temp
  • 3 tbsp melted butter or coconut oil

Directions

  1. In a blender (such as the vitamix) add all the dry ingredients, be sure the oats are blending down to a flour consistency.
  2. Now add all wet ingredients and blend well (If using flax eggs, you will want to prepare these in advance, allow them to sit for 15 min in the fridge). If you do not have a vitamix this step can be done in a medium bowl as long as you are starting with an oat flour.
  3. Pour the waffle mix onto a heated waffle maker and cook as per manual instructions. I prefer them on a medium-high heat so that they come out golden brown.
  4. Serve with fresh fruit, a dash of cinnamon or cacao, drizzle some pure maple syrup, etc!
