Imagine turning your morning bowl of oats into a waffle... I know right, magic! Well that's what we did here and it is definitely a breakfast worth bragging rights.
For vegan: use a vegan friendly milk, use a vegan butter or coconut oil, and swap the eggs for flax eggs. 1 egg = 1 tbsp ground flax + 3 tbsp water, whisked.
If you are gluten free, (GF) use a certified GF oat brand.
Top these waffles with your desired fruit toppings, a little syrup, and you are breakfast ready!

In a blender (such as the vitamix) add all the dry ingredients, be sure the oats are blending down to a flour consistency.
Now add all wet ingredients and blend well (If using flax eggs, you will want to prepare these in advance, allow them to sit for 15 min in the fridge). If you do not have a vitamix this step can be done in a medium bowl as long as you are starting with an oat flour.
Pour the waffle mix onto a heated waffle maker and cook as per manual instructions. I prefer them on a medium-high heat so that they come out golden brown.
Serve with fresh fruit, a dash of cinnamon or cacao, drizzle some pure maple syrup, etc!
