Ingredients

  • *Salad
  • 1 cup cooked quinoa
  • 1 roma tomato, diced
  • 1/4 cup red onion, diced
  • 1/4 cucumber, diced
  • 3 tbsp parsley, chopped
  • 3 tbsp cilantro, chopped
  • 2 tbsp hemp seeds
  • 2 tbsp pumpkin seeds
  • sea salt and pepper to taste
  • *Dressing
  • 1/4 ripe avocado, mashed
  • 1 clove garlic, minced
  • 2 tbsp extra virgin olive oil
  • 2 tbsp apple cider vinegar (or lemon juice)

Directions

  1. In a medium bowl, mix the quinoa, tomato, onion, cucumber, parsley, cilantro, hemp seeds, pumpkin seeds, salt and pepper (to taste)
  2. For the dressing: In a small bowl, combine the avocado, garlic, olive oil and apple cider vinegar/lemon juice
  3. Add the dressing into the salad bowl and enjoy!
