If you are looking for a quick and easy salad/meal look no further. This salad is so tasty and filling!

I love quinoa, I love salad, and I love Mediterranean food - this quinoa salad recipe right here is one of my all time favorites because of its amazing nutrient profile.

It is made with cooked quinoa and a variety of fresh vegetables, nuts/seeds, kalamata olives and topped with our homemade oil and vinegar dressing... and there you have it, a delicious meal (or side).

For a sweet or tart addition, feel free to add some pomegranate seeds or chunks of apple.

Ingredients

    Salad

  • 1 cup cooked quinoa
  • 1 roma tomato, diced
  • 1/4 cup red onion, diced
  • 1/4 cucumber, diced
  • 3 tbsp parsley, chopped
  • 3 tbsp cilantro, chopped
  • 2 tbsp hemp seeds
  • 2 tbsp pumpkin seeds
  • sea salt and pepper to taste
  • Dressing

  • 1/4 ripe avocado, mashed
  • 1 clove garlic, minced
  • 2 tbsp extra virgin olive oil
  • 2 tbsp apple cider vinegar (or lemon juice)

Directions

In a medium bowl, mix the quinoa, tomato, onion, cucumber, parsley, cilantro, hemp seeds, pumpkin seeds, salt and pepper (to taste)

For the dressing: In a small bowl, combine the avocado, garlic, olive oil and apple cider vinegar/lemon juice

Add the dressing into the salad bowl and enjoy!
