Ingredients

  • 4 peaches, pitted and coarsely chopped
  • 4 tbsps pure maple syrup
  • zest of 1 lemon (be sure it's organic)
  • 2 lemons, juiced
  • 3 cups water
  • ice

Directions

Combine the peaches, maple syrup, lemon zest and 1/2 cup of water in a saucepan over medium-high heat. Allow it to come to a boil and them reduce the heat, simmer for 3-4 minutes. Allow it to cool for 5-10 minutes.

Place the peach mixture into a blender, blend until smooth (I do it with the lid off or remove the centerpiece of my vita-mix lid to allow the heat out).

Once cool enough to handle, press the peach mixture through a sieve into a large jar, reserving the liquid and discarding the solids or you may save them to use in you baked goods.

Add the lemon juice and water, stir/shake well, you may need to adjust sweetness.

Serve cool with ice and garnish with peach slices or other summer berries!

Happy sipping!
