Ingredients
- *Chickpea Salad
- 2 cups cooked chickpeas
- 1/2 teaspoon sea salt
- black pepper
- 1 teaspoon turmeric powder
- 2 tablespoons yellow mustard
- 2 tablespoons fresh lemon juice
- 4 tablespoons mayonnaise (may substitute with tahini)
- 2 cloves garlic, minced or pressed
- 1/2 cup bell pepper, finely chopped (red or orange)
- 4 celery stalks, finely chopped
- 2 green onions, sliced (or 1/4 cup red onions, finely chopped)
- 1/2 cup dill pickle, chopped
Directions
- In a large bowl, smash the chickpeas with a fork or potato masher. Leave some whole, some half smashed, etc
- Add the salt, pepper, turmeric powder, mustard, lemon juice, vegan mayonnaise, and garlic.
- Now add all other ingredients and combine. Taste and adjust spices as needed.
- Serve as desired.
Recipe notes:
1 cup raw chickpeas is equivalent to 1 3/4-2 cups cooked chickpeas
