
Tofu Scramble - Indian Spiced

Ingredients
- 1-2 cloves garlic, minced
- 1/2 cup baby spinach
- 1/2 cup yellow onion, diced
- 1/2 inch piece ginger, peeled and minced
- 1/8-1/4 tsp chili powder (optional)
- 1 package firm organic tofu, drained (14 oz)
- 2 tbsp avocado oil
- 3/4 tsp cumin seeds
- 3/4 tsp turmeric powder
- sea salt and pepper to taste
Directions
- Heat your pan over medium-high heat.
- While the pan is warming up, press the tofu between 2 sheets of paper towel - this will soak up any excess liquid. Set aside.
- Once the pan is warm, add the oil and cumin seeds, cook for 30 secs, stir often to prevent them from burning.
- Now add the ginger, garlic and onion. Cook until the onion is translucent (4-5mins), stir often.
- Now add the tofu, crumbling it with your fingers as you add it to the pan.
- Add the turmeric and chili powder (optional), stir it around til the yellow hue from the turmeric covers the tofu. Cook for about 5 minutes.
- Add the salt and pepper to taste.
- While the pan remains on the heat, add the spinach and cook until wilted (1-2 mins), stirring it.
- Serve with a side of vegetables, avocado, toast and/or roasted potatoes.
