If you like Indian food and you like scrambled eggs, look no further... I have a delicious fusion recipe you definitely want to try out!
This vegan and gluten free tofu scramble is spiced with the perfect amounts of garlic and ginger, cumin, turmeric and chili powder (optional). The crumbled tofu tastes very similar to a scrambled egg (have even tricked my kids)... Go ahead and try it, you'll see what I am talking about.
Whether you are vegan or looking for some meat and egg free meals to add to your menu, do yourself a favor and add this scramble to your plate.

Heat your pan over medium-high heat.
While the pan is warming up, press the tofu between 2 sheets of paper towel - this will soak up any excess liquid. Set aside.
Once the pan is warm, add the oil and cumin seeds, cook for 30 secs, stir often to prevent them from burning.
Now add the ginger, garlic and onion. Cook until the onion is translucent (4-5mins), stir often.
Now add the tofu, crumbling it with your fingers as you add it to the pan.
Add the turmeric and chili powder (optional), stir it around til the yellow hue from the turmeric covers the tofu. Cook for about 5 minutes.
Add the salt and pepper to taste.
While the pan remains on the heat, add the spinach and cook until wilted (1-2 mins), stirring it.
Serve with a side of vegetables, avocado, toast and/or roasted potatoes.
