Chocolate Covered Coconut Bar (Bounty Bar)

Ingredients

  • 1 1/2 cups shredded unsweetened coconut
  • 4 tbsp full fat coconut milk
  • 2 tbsp unrefined coconut oil
  • 1/4 tsp sea salt
  • 1 cup + 1 tbsp chocolate chips
  • *Toppings (optional):
  • salt flakes, hemp seeds, shredded coconut, etc

Directions

  1. In a medium sized bowl, add the shredded coconut, coconut milk, coconut oil, and sea salt - stir to combine.
  2. Form into 7-8 small bars and place in the freezer for about 15 minutes.
  3. While the bars are in the freezer, carefully melt the chocolate chips.
  4. Remove the coconut bars from the freezer and dip them into the melted chocolate, cover each bar completely.
  5. Return them to the freezer for about 10 minutes until they firm up.
  6. Remove from the freezer approx 10 minutes before eating. Store in the freezer for up to 3 weeks.
