
Chocolate Covered Coconut Bar (Bounty Bar)

Ingredients
- 1 1/2 cups shredded unsweetened coconut
- 4 tbsp full fat coconut milk
- 2 tbsp unrefined coconut oil
- 1/4 tsp sea salt
- 1 cup + 1 tbsp chocolate chips
- *Toppings (optional):
- salt flakes, hemp seeds, shredded coconut, etc
Directions
- In a medium sized bowl, add the shredded coconut, coconut milk, coconut oil, and sea salt - stir to combine.
- Form into 7-8 small bars and place in the freezer for about 15 minutes.
- While the bars are in the freezer, carefully melt the chocolate chips.
- Remove the coconut bars from the freezer and dip them into the melted chocolate, cover each bar completely.
- Return them to the freezer for about 10 minutes until they firm up.
- Remove from the freezer approx 10 minutes before eating. Store in the freezer for up to 3 weeks.
