Call it what you want, a Bounty Bar or a Mound, these delicious (vegan and GF friendly) chocolate covered bars of sweet shredded coconut are mouth watering delicious.
In Canada, we grew up loving our Bounty bars. Inside you’d find two small chocolate covered coconut bars in the package. My mama would always share hers with me - it was the easiest way to bring an ear to ear smile on my face!
I have seen many online versions of this bar but wanted to make a healthier version for my family to enjoy. I present you with our version of the delicious, mouth watering Bounty Bar!
I store them in an airtight container in the freezer, they store well up to 3 weeks. I remove them about 5-10 minutes before eating.

In a medium sized bowl, add the shredded coconut, coconut milk, coconut oil, and sea salt - stir to combine.
Form into 7-8 small bars and place in the freezer for about 15 minutes.
While the bars are in the freezer, carefully melt the chocolate chips.
Remove the coconut bars from the freezer and dip them into the melted chocolate, cover each bar completely.
Return them to the freezer for about 10 minutes until they firm up.
Remove from the freezer approx 10 minutes before eating. Store in the freezer for up to 3 weeks.
