Ingredients
- 1 1/2 cups oat flour
- 2 tsp baking powder
- 1/2 tsp sea salt
- dash of cinnamon
- 2 large eggs
- 2 tbsp pure maple syrup
- 3/4 cup milk of choice (adjust as needed)
- 1/4 cup coconut oil, melted
- 1 tsp pure vanilla extract
Directions
- Preheat the waffle iron. Prepare the iron as directed.
- In a large bowl, whisk together the oat flour, baking powder, baking soda, sea salt, and cinnamon. Set aside.
- In another large bowl, whisk together the eggs, maple syrup, milk, coconut oil and vanilla extract.
- Now add the egg mixture to the oat flour mixture, stir to combine (may need to adjust wet ingredients, 1 tbsp at a time).
- Now with the heated waffle iron, add 1/4 cup of the waffle mixture to the iron. Cook as directed, until the waffle timer goes off and the waffle is golden brown on each side.
- Top as desired and serve immediately.
