Waffles are a classic breakfast and brunch option. We also enjoy them as a dessert in our home. Typically waffles can be unhealthy, however, this one has no white sugar, instead it uses maple syrup. We also swapped the white flour with oat flour (feel free to swap flours). Don't be fooled, it tastes just as good!

To serve this delicious golden waffle as a breakfast, top with fresh in season fruit and pure maple syrup.

To serve this waffle as a dessert, top it with a chocolate-hazelnut spread, whipped cream, chocolate drizzle, icecream, fresh fruit, etc.

However you decide to serve this dish, it will definitely be a crowd pleaser.

Ingredients

  • 1 1/2 cups oat flour
  • 2 tsp baking powder
  • 1/2 tsp sea salt
  • dash of cinnamon
  • 2 large eggs
  • 2 tbsp pure maple syrup
  • 3/4 cup milk of choice (adjust as needed)
  • 1/4 cup coconut oil, melted
  • 1 tsp pure vanilla extract

Directions

Preheat the waffle iron. Prepare the iron as directed.

In a large bowl, whisk together the oat flour, baking powder, baking soda, sea salt, and cinnamon. Set aside.

In another large bowl, whisk together the eggs, maple syrup, milk, coconut oil and vanilla extract.

Now add the egg mixture to the oat flour mixture, stir to combine (may need to adjust wet ingredients, 1 tbsp at a time).

Now with the heated waffle iron, add 1/4 cup of the waffle mixture to the iron. Cook as directed, until the waffle timer goes off and the waffle is golden brown on each side.

Top as desired and serve immediately.
