I love cookies, and what I love more are healthy and delicious cookies made with simple good for you ingredients.

These cookies contain just a handful of ingredients. They have an almond flour base and are sweetened with honey. They melt in your mouth and pair great coffee or tea.

If you are looking for a healthy and nutritious cookie, look no further.

Ingredients

  • 2 cups almond flour
  • 1/4 tsp baking soda
  • 1/4 tsp salt (I prefer himalayan pink salt)
  • 2 tsp vanilla
  • 4 tbsp coconut oil
  • 5 tbsp honey

Directions

Set the oven to 350°, line a baking pan with unbleached parchment paper.

In a medium sized bowl, mix all the ingredients together.

Make 12-13 cookies and slightly flatten them using your fingers.

Bake for 9 mins. Remove from the oven and transfer to a cooling rack.

Serve with your favorite tea or see one of my other hot beverage recipes (chai, matcha, or golden milk).
