Crisp yet tender cauliflower is sautéed with aromatic garlic, red onion, and bold taco spices, then tucked into perfectly warmed taco shells and topped with fresh avocado, shredded purple cabbage, roasted corn, and a squeeze of lime. Light, wholesome, and effortlessly delicious, these tacos are as beautiful to serve as they are to enjoy.

Naturally gluten-free, dairy-free, and completely plant-based, this recipe is as nourishing as it is flavorful. Serve with chilled sparkling lime water for the perfect balance of fresh and cozy.

Notes: If your taco seasoning does not contain salt, you will need to add some.

Ingredients

  • __For the Cauliflower Filling:__
  • 3 tbsp avocado oil
  • 2 cloves garlic, minced
  • ¼ cup red onion, thinly sliced
  • 1 medium head cauliflower, stems removed & broken into bite-sized pieces
  • 4-5 tbsp taco seasoning (homemade or store-bought)
  • __For Serving:__
  • 12-13 taco shells (hard or soft)
  • Fresh cilantro, chopped
  • Lime wedges
  • Purple cabbage, thinly sliced
  • Avocado, sliced
  • Roasted corn
  • Jalapeño peppers, thinly sliced

Directions

Prep your ingredients: Slice, dice, and measure everything before you start cooking.

Sauté the aromatics: Heat a medium-sized skillet over medium heat. Add avocado oil, garlic, and red onion, stirring frequently for about 1-2 minutes until fragrant. Be careful not to burn the garlic!

Cook the cauliflower: Add the cauliflower florets and taco seasoning, stirring well to coat everything in the delicious spices. Sauté for about 10 minutes, stirring occasionally, until the cauliflower is tender but still has a slight bite.

Assemble your tacos: Load up your taco shells with the warm, spiced cauliflower, then pile on your favorite toppings, cilantro, lime, cabbage, avocado, roasted corn, and jalapeños.

Serve immediately & enjoy!
