Ingredients

  • 1 large egg or egg alternative (1 flax egg = 1 tbsp ground flaxseed mixed with 3 tbsp water, mix and let i sit for 5 minutes)
  • 3 tbsps coconut oil, melted
  • 1/4 cup coconut sugar
  • 2 teaspoons vanilla extract
  • 3/4 cup almond flour
  • 1/2 cup rolled oats
  • 1/4 teaspoon sea salt
  • 1 1/2 teaspoons cinnamon
  • Optional mix-ins: 1/3 cup chocolate chips of choice, 1/3 cup raisins, or 1/3 cup chopped walnuts

Directions

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Prepare the flax egg in a small bowl, if using, and set aside to thicken.

In a large bowl, whisk together the wet ingredients until well combined.

In another bowl, mix together the dry ingredients.

Gradually combine the dry ingredients with the wet, mixing until just combined.

Fold in the chocolate chips, nuts, and dried fruit, if using.

Scoop dough onto the baking sheet, spacing cookies about 2 inches apart.

Bake for 12-15 minutes or until the edges are golden.

Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
