Are you ready to feel like a goddess? Yes, a salad eating goddess! All the greens, all goodness, in one bowl!

This beauty of a salad is made with spinach, arugula, red bell peppers, onion, mint, and basil. For protein I added some pine nuts, pumpkin seeds, and chickpeas (feel free to swap nuts and seeds). A plant-based, fiber rich bowl!!

I blended up a homemade dressing and drizzled 1/4 cup over the salad. I highly suggest making a homemade dressing for the full goddess effect!

Ingredients

  • 2 cups spinach
  • 1 cup arugula
  • 1/3 cup red bell pepper, chopped
  • 1/4 cup red onion, chopped
  • 2 tbsp pine nuts
  • 2 tbsp pumpkin seeds
  • 1 tbsp mint leaves, torn
  • 1 tbsp basil leaves, torn
  • 1/2 cup cooked chickpeas (may use canned, drained and rinsed)
  • 1/2 avocado, chopped
  • Optional: 1/4 cup feta cheese, cut in cubes

Directions

In a large bowl, combine all ingredients. Add 1/4 cup of the dressing and toss the salad. Toss it well so the dressing covers all the greens.

Enjoy as 1 or share (Yes, I eat this entire salad to myself)!!
