These delicious chocolate chip cookies are gluten-free, vegan friendly, and 100% approved by my husband (aka the cookie monster).
We are not gluten free in our home but we like to enjoy foods, lower on the gluten side to lessen the bloat. Made with whole food ingredients like almond flour, almond butter, rolled oats (make sure they are GF), maple syrup, coconut and chocolate chips - these cookies are a WIN-WIN. They satisfy your sweet tooth and keep your energy in a good place.
So without any further ado... let the cookie baking begin!

Preheat the oven to 350°. Gather all ingredients and supplies. Line a baking sheet with unbleached parchment paper.
In a large bowl add the almond flour, oats, cinnamon, hemp seeds, baking powder and salt, whisk and set aside.
In the same bowl add the remaining ingredients and mix well.
Separate the batter into even sized balls (approx 14 cookies).
Place the cookies onto the pan and lightly press them with the back of a fork (leave just a little space between them).
Bake in the oven for 11-13 minutes.
Remove the pan from the oven and allow the cookies to cool on a rack for 5-7 minutes.
