Crafted from a handful of wholesome ingredients including raw cashews, Medjool dates, unsweetened shredded coconut, chia seeds, hemp seeds, and zesty lemon, these date balls offer a burst of flavor and nutrition in every bite.

For storage convenience, we recommend keeping them in the freezer for a refreshing chilled treat, although they can also be stored in the fridge. Note that they stay fresh for up to a week in the fridge and up to 2 months in the freezer.

Ingredients

  • 1 cup raw cashews (almonds work as well)
  • 1 cup Medjool dates, pitted
  • 1/2 cup unsweetened shredded coconut (divided)
  • 2 tbsp chia seeds
  • 2 tbsp hemp seed
  • zest from 1 lemon
  • 2 tablespoon lemon juice
  • pinch of sea salt

Directions

Add the cashews to a food processor, pulse til chopped.

Add all the other ingredients, except 1/4 cup shredded coconut (save til the end). Pulse until it is well combined.

Roll the mixture into 1 tbsp size balls and roll it into the remaining coconut. (If the date mixture is sticking to your hands, slight dampen your hands to roll the ball)

We store the balls in an air tight container in the freezer and enjoy them cold. They will be good in the freezer for up to 2 months.
