Butternut squash is such a fun food, its vibrant color and sweet, unique taste makes it a great addition to a veggie bowl or as a taco topping. It is packed with vitamins and minerals, making it a nutrient dense food. Why wouldn't you consider adding this squash to your diet?

Whether you choose to eat it on its own, as a side, or in one of my delicious quinoa bowls. You cannot go wrong.

I often hear people tell me they are not sure how to cook squash (how to peel, how to cut, etc.). Simply use a potato peeler to remove the skin, chop the ends off, slice it in half and remove the seeds. Then chop it into cubes, season it, and bake it for about 30-35 mins at 400° - voila!

Ingredients

  • 1 medium butternut squash (peeled and cubed)
  • 2 tbsp avocado oil
  • 1 tbsp Herbs de Provence (optional)
  • sea salt and pepper to taste

Directions

Preheat the oven to 400° and line a baking sheet with unbleached parchment paper.

Peel the butternut squash using a peeler and slice it in half. Remove the seeds. Cut the squash into 1/2 inch cubes.

Place the cubed squash and all other ingredients to a bowl and mix so that all the pieces of squash are covered with oil and spices.

Add the squash to the baking pan and place into the over for 30-35 mins.

Remove from the oven and enjoy them warm as is or add them to a rice bowl, quinoa bowl, or as a taco topping.
